Abstract
Partial-frozen storage after respective dipping treatment of Lysozyme, Nisin and the mixture of both, during which the measurement of TVB-N, TBA and Ca2+-ATPase is carried out attempting to find out the effects on the quality of Ruditapes philippinarum. It turns out: lower activity of Ca2+-ATP and lower values of TVB-N, TBA can be reached in Partial-frozen storage after respective dipping treatment of Lysozyme, Nisin and the mixture of both. Furthermore, the mixture bears better storage results.
