  • Abstract
    In order to improve the drying technique and the drying efficiency of Electrohydrodynamic drying with wire electrode, the author investigated the effects of various physical factors on the drying rate of electrohydrodynamic drying with wire electrode. Tofu contained in the petri dish was put in high voltage electrosatic field formed by a wire electrode and a plate pole. By changing the voltage, electrode spacing and the distance between the two neighboring wires, the factors related to the drying rate are quantitatively studied. The results indicate that high voltage electrosatic field formed by a wire electrode can improve the drying rate of the tofu significantly, with 45 kV, the drying rate of the tofu samples is almost 8 times as much as that of control at the same temperature. When the supplied voltage is not changed, the drying rate of the tofu is changed with the distance between the two neighboring wires, when the distance between the two neighboring wires is constant, the drying rate of the tofu is changed with the electrode spacing. When electrode spacing and the distance between the two neighboring wires are both 9 cm as well as the voltage is 45 kV, the drying rate is the largest.
