Abstract :
This paper studies the preparation technology of microencapsulation using cactus pectin and phospholipids. The result showed that the wall materials and their optimum composition was pectin/maltodextrin is 1:2(mol/mol). the concentration of emulsion is 25%(wt/wt). The suitable proportion of core material and wall material was 0.5□1, homogenizing speed was 6000 r / min. The feed temperature of spray drying was 6°C, feed flow rate was 150mL/min, temperature of entering wind and out wind were 150°C and 70°C respectively.
