  • Abstract
This experiment use Sthenoteuthis oualaniensis egg as material through appropriate pre-processes to make the contained cholesterol released completely, then by using subcritical 1,1,1,2-tetrafluoroethane (R134a) extraction technology with orthogonal experiment to determine the best technical conditions for the removal of cholesterol from Sthenoteuthis oualaniensis egg powder. The results showed that after the mechanical crushing and the processing by enzyme, cholesterol content in sample increased from 13.06 mg/g to 21.00 mg/g, which meant the most of cholesterol in Sthenoteuthis oualaniensis egg powder had been released. The order of the influence factors on the removal rate of cholesterol was extracting temperature >; extracting time >; extracting pressure. The optimal parameters were that extracting temperature, 323 K; extracting time, 6 hours; extracting pressure, 8 MPa, at these conditions, the removal rate of cholesterol from Sthenoteuthis oualaniensis egg powder could be up to 99.26%.
