Abstract
A colour image processing workstation has been developed to assist cereal grain inspection for grading purposes. It has been initially applied to wheat grain colour analysis. Application of colour and texture analysis has not previously been reported. Colour is particularly important for the quality assessment of cereals. Equipment and methodology for kernel colour analysis are described in this article. To illustrate the application of the system to a specific grading problem, tristimulus colour data from ten commercially grown varieties of wheat grown in Western Canada is presented. Linear discriminant analysis applied to this data shows colour discrimination between varieties of different utilization quality
