Abstract
This study isolated 8 thermophilic fungi from pile-fermentation of Pu-er tea, and identified as Rhizomucor pusillus (4 strains), Aspergillus fumigates (2 strains), Rhodotorula glutinis (1 strains), Thermomyces lanuginosus (1 strain) by 18S rDNA homology analyses. The strains were added into pile-fermentation of Pu-er tea to observe the effects on the fermentation. The results showed that the strains presented a promise effect on Pu-er tea fermentation.
