Abstract :
The corn embryo was taken as raw material to extract glutathione, and the antioxidant activity of reduced glutathione was studied. The result indicated that the glutathione had strong elimination ability to free radicals. Total antioxidant ability was 12.95U/mL, the maximum inhibition rate to hydroxyl free radical was 80.19%, the maximum ability to anti-superoxide anion was 135.2U/L, the maximum inhibition rate to DPPH· was 79.37%.
