  • Abstract
    Microbial transglutaminase (MTG) was used to recover protein from soybean whey wastewater, based on the SDS-PAGE GE electrophoresis, single factor and orthogonal experiments, the optimum polymerization conditions of the protein in the soybean wastewater by MTG was obtained as follows: 6 mL of enzyme (1U/ml), reaction time 1 h, 35°C and pH 7. There were 4 bands with the molecular weight of 80 kD, 63 kD, 53 kD and 31 kD and lots of fractions with the MV lower than 23 kD in the soybean whey wastewater before the treatment by MTG, after the treatment, two new bands with the MW of 57kD and 40kD appeared, while the lnt value of the bands with MW higher than 31 kD increased slightly. MTG had significant effect on the polymerization of fractions with large molecular weight.
