Abstract
In order to make use of jujube residue, insoluble dietary fiber from jujube residue was prepared by using auxiliary alkal method . The functional characteristics of insoluble dietary were also studied, such as water holding capacity, expansibility and fat adsorption capacity. The optimum parameters obtained by orthogonal experiment were as follows : NaOH concentration 0.4mol/L , soaking temperature 50°C, soaking time 120 min and milled size 60 mesh. Under this condition, yield of insoluble dietary fiber was 73.1%. The water holding capacity, expansibility and fat adsorption capacity of insoluble dietary fiber were 4.9g/g, 4.6mL/g , and 3.2g/g , respectively. The extraction yield of dietary fiber from jujube residue was higher, and its physicochemical characteristic was good. There are good prospects for development.
