Abstract
The authors have recently developed a novel micromachined device for preparing monodisperse emulsions, referred to as a straight-through microchannel (MC) plate, an array of uniformly sized through-holes fabricated on a single-crystal Si plate by microelectromechanical systems (MEMS) fabrication technology. They report the fabrication process, and also investigate the formation characteristics of oil-in-water (O/W) emulsion droplets composed of food-grade ingredients using an oblong straight-through MC.
