The extraction of polysaccharide from lycium barbarum was optimized to maximize polysaccharide yield Y in this study. A central composite design of response surface methodology involving extracting temperature, extracting time and liquid-solid ratio was used, and second-order model for Y was employed to generate the response surfaces. The optimum condition for Y was determined as follows: extracting temperature 100°C, extracting time 2.13h and liquid-solid ratio 10. Under the optimum condition, the polysaccharide yield was 9.22%.
