Abstract :
For the purpose of obtaining probiotic starters to produce functional pickles, 59 strains were isolated from 15 samples of brine And two promising strains labled A18 and B17 were screened out according to their ability of producing organic acid and survival in the models environment of stomach and small intestine. The strians were identified and analyzed by morphology properties of the colony and the cell together with the sequencing of the 16S rRNA gene, data indicated that both strains were Lactobacillus plantarum.
