Abstract :
The Ohmic heating process allows to heat solid or liquid material and high efficiency. Therefore is widely used in food and mechanical processing. Nevertheless in Ohmic heating the temperature of the object to be heated, changes very fast and enough attention has been not paid to evaluate and develop mathematical models to analyse and estimate temperature during heating process. This document presents the thermal model obtained experimentally using joint exposed thermocouple installation method and compares with common shielding thermocouple installation. A fast response model was obtained with joint exposed method, however off-set temperature values are present into the model.
