Abstract
In this study, caged poultry as the research object, antibiotics are quantitatively analyzed by near infrared spectroscopy. Introducing food safety index indicators by calculating the amount of dietary exposure with the data to assess health risk. Finally, by using SOM neural network to verify the practicality. Risk assessment model combined with the national standard divide tetracycline residues of chicken risks into: high, medium and low. So it improves the applicability of the national standard. To conclude, this study can be applied to test other related agricultural products and food industry to guarantee food security.
