Development of an effective system for remote monitoring of banana ripening process

Banana is a fruit, which is not ready to eat from the farms; it has to be ripened in the store room with added chemicals. The ripening of banana may be identified by its colors. This paper proposes an easy monitoring system to monitor the color indices of the bananas and to identify ripening stage of banana; this information will be sent to the monitoring person automatically to the remote area. The camera will take the image of the banana fruits which will be fed to the MATLAB software to identify the ripening stage of banana from RGB values. This information will be processed by microcontroller to the authorize person using GSM module.
