Abstract :
This paper presents the mathematical model and the simulation algorithm of the malt drying in double bed. The mathematical model upon which the simulation algorithm is based consists of four partial differential equations established around an elementary layer (water and heat balances, and water and heat transfer rate equations). The model allows to predict the malt moisture content evolution simultaneously in both kilning plates as well as drying air temperature and RH. The results have been validated experimentally at industrial scale.
