چكيده فارسي :
عصارخانه به عنوان يكي از مراكز صنعتي مهم در شهرهاي بزرگ، از گذشته تا كنون، داراي ابعاد مختلفي است كه در آن محيط كالبدي، ابزار و ادوات و دانش و علوم مرتبط با اين صنعت، دست به دست هم داده تا محصولاتي از عصاره دانه هاي روغني با چندين كاربرد توليد شوند. از آنجايي كه توليد محصولات روغني نيازمند زمان طولاني و نيروي كارآمد بوده و طي مراحلي طاقت‌فرسا حاصل ميشده است، بنابراين، محصولاتي ارزشمند و نيازمند شرايط و وسايل نگهداري مناسب بودهاند. در اين راستا، با توجه به نقش بسزايي كه ظروف سفالي در عصارخانهها داشته‌اند، پژوهش پيش رو جهت پاسخ‌گويي به اين سؤالات انجام گرفته است؛ 1. ويژگي ظروف سفالي عصارخانه ها چيست؟ 2. ظروف سفالي در عصارخانه ها چه نقش و كاربردي داشته‌اند؟ 3. در طبقه‌بندي سفالينه ها، ظروف عصارخانه در كدام دسته قرار ميگيرند؟ پژوهش حاضر با رويكردي توصيفي-تاريخي و با تكيه بر منابع مكتوب و مشاهده تعدادي عصارخانه در استان اصفهان، ضمن برشمردن ويژگي‌هاي ظروف عصارخانه ها به‌ويژه سفال‌ها و خمرههاي بزرگ حمل و ذخيره روغن، اشارهاي نيز به نمونه‌هاي مشابه اين ظروف از گذشته تا كنون داشته است. نتيجه پژوهش چنين حاصل آمد كه ظروف سفالي عصارخانهها، داراي ويژگيهايي همچون نوع متفاوت لعاب، شكل و اندازه و خصوصاً كاربردهاي متنوع در قسمت‌هاي مختلف عصارخانه هستند؛ به‌گونه‌اي كه برخي جهت روغن گيري، داخل زمين و برخي جهت نگهداري، درون ديوارها جايگذاري ميشده و برخي، ظروف ذخيره و حمل روغن بودهاند. بنابراين اين ظروف، نوع خاصي از ظروف سفالي بوده كه فقط براي مجموعه هاي كارگاهي توليد ميشده و ميتوانند به‌عنوان سفالينه‌هاي محلي براي مجموعه‌هاي كارگاهي معرفي شوند.

From ancient times to the present, Assar Khaneh as one of the important industrial centers in big cities has different dimensions which tools, instruments, knowledge and science
related to this industry put hand in hand to produce products extracted from oilseeds with
multiple uses. Since producing oil products requires a long time and efficient forces, they
were worthwhile products which need suitable conditions and storage equipment. In this
regard, due to the significant role of pottery in Assar Khanehs, the present study seeks to
answer the following questions: 1.What are the characteristics of pottery used in Assar
Khanehs? 2. What is the role and function of pottery in Assar Khanehs? 3. Pottery in Assar
Khanehs are placed in which category of pottery? The present paper has used descriptivehistorical
approach, and specifies the characteristics of Assar Khaneh dishes, especially
pottery and big crocks for carrying and storing oil, by relying on written resources and
observing some Assar Khanehs in Isfahan province. In addition, similar containers and
dishes from the past time have been presented. The result of the research shows that Assar
Khaneh potteries have different glaze, shape, size, and specially function in various parts
of the Assar Khaneh, in such a way that some of them are placed in the floor to take oil,
some are put in the walls to store, and others are used to store and carry oil. Therefore,
these dishes are special kind of pottery which are produced for workshops and they can
be introduced as local pottery.
