Detection of unauthorized tissue in some of cured meat products of Tehran with histological method

In order to histological examination of cured meat products, 10 samples of hamburger and kebab loghmeh (A kind of meat product) were collected from different shopping in Tehran city. From each samples one piece of 1 *2*2 cm3thick were taken and after labelling and wrapping into the cotton thin clothes, fixed in 10%buffered formalin. Routine histolo-gical laboratory methods were used and paraffin blocks prepared. From each sample, 10 sections and totally 100 sections with 6um thickness prepared and stained with hematoxylin- eosin and studied under light microscope. Results showed unauthorized tissue of udder in 3 samples of hamburgers. There were not detected any unauthorized tissue in other samples.
