چكيده لاتين :
Bacteriocin like substances (BLS) produced by six kinds of L. acidophilus isolated from bioyoghurt were studied in the MRS broth in medium containing 1-2% glucose at pH 6.5-7. The presence of this amount of glucose in MRS broth enhances BLS production as well as growth of all strains. The highest amount of BLS happenes in the exponential phase of bacterial growth. The BLS showed more strong antimicrobial activity against p. aeroginosa in comparison with P. aeroginosa. The results show that BLS can be used as a biopreservative material in food produtions in absence of organic acids and hydrogen peroxide in medium.
