The effect of electron beam on protein degradation kinetics and anti-nutritional factors of soybean

This study was carried out to determine effects of electron beam on anti-nutritional factors and ruminal dry matter (DM) and crude protein (CP) degradation of soybean. Nylon bags of untreated or irradiated soybean at dose of 15 and 30 kGy were suspended in the rumen of three sheep fitted with ruminal fistulaed for 0, 2, 4, 8, 12, 16, 24 and 48 h. There were significant differences between the effective rumen degradability values of untreated and irradiated cottonseed DM and CP at different rumen outflow rates. The rumen degradability of untreated and treated soybean CP at ruminal outflow rate 0.05/h were 80.29% for untreated and 73.28% for irradiated. The electron beam irradiation was reduced phytic acid and trypsin inhibitor activity of soybean at the rate of 99.45% and 67%.
