First report of Byssochlamys spectabilis as a teleomorph of Paecilomyces variotii from Iran

نخستين گزارش از Byssochlamys spectabilis به عنوان فرم جنسي Paecilomyces variottii از ايران

طي سالهاي 89-1388، حضور گونه‌هاي آسكوميست از پنيرهاي موجود در كارخانجات استان‌هاي فارس و خوزستان مورد بررسي قرار گرفت. جداسازي نمونه‌هاي قارچي با استفاده از محيط كشت‌هاي عصاره مالت آگار و عصاره سيب زميني دكستروز آگار صورت گرفت. خصوصيات فرم جنسي شامل ريخت‌شناسي آسكوكارپ، آسك و آسكوسپورها و خصوصيات فرم غيرجنسي شامل كنيديوفور، فياليد، كنيديوم و كلاميدوسپور براي تشخيص استفاده شد. از اغلب پنيرهاي موجود دركارخانجات استان فارس و خوزستان گونه Byssochlamys spectabilis به عنوان فرم جنسي Paecilomyces varioii تشخيص داده شد كه در بعضي از موارد فرم جنسي و غير جنسي همراه بودند. گونه‌هاي اين جنس توليد آسكوسپورهاي مقاوم به حرارت مي‌كنند و قادر به بقا تا دماي 85 درجه سلسيوس مي‌باشند. علاوه بر مقاومت در دماي بالا، اين گونه قادر به رشد در شرايط پايين اكسيژن و توليد آنزيم پكتوليتيك مي‌باشد. اين ويژگي‌هاي فيزيولوژيك، گونه‌هاي اين جنس را جزو فاسد كننده‌هاي مواد پاستوريزه و كنسرو قرار مي‌دهد. اين گونه براي نخستين بار از ايران گزارش مي‌شود.

During 2009–10, cheese samples were collected from shops and cheese factories in Fars and Khuzestan provinces. Isolates were recovered from cheese using malt extract agar (MEA) and potato dextrose agar (PDA). Teleomorphic characteristics such as morphology of ascocarps, asci, ascospores and anamorphic characteristics such as conidiophores, phialides, conidia and chlamydospores were investigated. Based on the above criteria Byssochlamys spectabilis, the teleomorph of Paecilomyces varioii, was identified. Byssochlamys species produce ascospores which are heat resistant, and survive considerable periods of heat above 85° C (Beuchat Rice 1979, Splittstoesser 1987). In addition to its heat resistance, the fungus can grow under very low oxygen tensions (Taniwaki 1995) and can form pectinolytic enzymes. The combination of these three physiological characteristics makes Byssochlamys species very important spoilage fungi in pasteurised and canned fruit. It is the first report of this teleomorph from Iran.
