Tomato is one of the important products, which is produced in the world. The world production of this product was 98.8 million tons in 2000. Since the market availability of different tomatoes varieties is considerable, the exact evaluation of physico-chemical and sensory characteristics of such varieties should be carried out according to the cultivation management of each rigion before any product is produced. In this way, the best variety of tomato can be recommended according to the considered application. Therefore, the selection of suitable variety is the first step in optimizing the production chain and processing of tomatoes. A comprehensive study was carried out on the physico-chemical and sensory properties of 17 tomato varieties at three-harvest time in Mashhad Iran. This characteristies were analyzed statistically for hybrid and standard varieties. The results showed that the hybrid varieties L.T.H.B. (020) and Dual-Plus and the standard varieties Early Orbana-Y and Caljn 3 had constant and desirable charactristics for both fresh market and processing purposes during harvest time.
