تاثير پوشش خوراكي كيتوزان - رزماري بر كيفيت و ماندگاري (shelf life) فيله ي تازه ي ماكيان در دماي يخچال

Effect of edible chitosan-rosemary coating on quality and shelf life of refrigerated chicken fillets

گوشت سينه ي ماكيان (فيله) در سرتاسر جهان مورد استقبال مصرف كنندگان بوده اما مستعد فساد سريع مي باشد. از اين رو، صنايع امروزه درصدد يافتن فناوري جديد براي افزايش مدت ماندگاري آن هستند. به علاوه، تقاضاي مشتريان براي مواد غذايي سالم تر (فاقد نگهدارنده هاي شيميايي مرسوم) در دهه ي اخير افزايش پيدا كرده است. كيتوزان يا فرم داستيله كيتين، پلي ساكاريدي است كه در پوشش خارجي خرچنگ ها و ميگوها و ديواره ي سلولي قارچ ها يافت مي شود و ويژگي غيرسمي، زيست فروپاشي و زيست سازگاري آن به اثبات رسيده است. اسانس ها از گياهان استخراج شده و طي دهه ها به خاطر داشتن فعاليت هاي بيولوژيكي شامل خواص آنتي اكسيداني، ضد سرطاني و ضد ميكروبي شناخته شده هستند. مطالعه ي حاضر جهت ارزيابي تاثير پوشش خوراكي كيتوزان 2 درصد حاوي اسانس 1 درصد رزماري روي ماندگاري و حفظ كيفيت گوشت سينه ي مرغ در دماي يخچال انجام گرفته است. نمونه ها به 3 گروه بدون پوشش (كنترل)، تيمار شده با اسيد استيك 1 درصد و غوطه ور شده در محلول كيتوزان حاوي اسانس رزماري تقسيم شدند. نمونه ها سپس در دماي يخچال (1±4 درجه ي سانتي گراد) به مدت 15 روز نگهداري شدند و در فواصل معين زماني (روزهاي 0، 3، 6، 9، 12 و 15) جهت آزمايش هاي ميكروبيولوژيكي (شمارش باكتري هاي مزوفيل و سايكروفيل)، شيميايي (TVN, TBA, pH) و حسي (شكل ظاهري، ميزان الاستيسيته عضلات، بو و رنگ) مورد ارزيابي قرار گرفتند. نتايج بررسي باكتريايي دلالت بر اين داشت كه پوشش دهي اثر معني داري (05/0p < ) بر كاهش شمارش باكتري هاي مزوفيل و سايكروفيل با حداقل 15 روز نگهداري را داشته است. همچنين نمونه هاي غوطه ور شده در كيتوزان حاوي اسانس رزماري ميزان TVN, TBA و pH كم تري از دو گروه ديگر در طول نگهداري نشان دادند و از نظر فاكتورهاي حسي نيز نسبت به دو گروه ديگر باعث حفظ فاكتورهاي حسي در سطح قابل قبول به مدت 15 روز گرديد.

Chicken breast meat (fillet) is favored by consumers worldwide but it is prone to rapid spoilage, therefore, food industries are nowadays seeking technologies to increase its shelf-life. Spoilage of fresh poultry products is an economic burden to the producer. Furthermore, as consumerʹs demand for more “healthier” meals (free of conventional chemical preservatives) has increased in the last decade. Chitosan, a deacetylated form of chitin, is a polysaccharide found in the shells of crab and shrimps and the cell walls of fungi. Chitosan has been proved to be non-toxic, biodegradable and biocompatible. Essential oils derived from plants have been recognized for decades to exhibit biological activities, including antioxidant, anticancer and antimicrobial attributes. The present study was conducted to evaluate the effect of chitosan edible coating (2%) containing rosemary essential oil (1%) on the shelf life and keeping quality of chicken breast meat at refrigerated storage temperature. Samples were separated into three groups; uncoated (control), treated with acetic acid 1% and coated with chitosan containing rosemary essential oil. Samples were stored at 4±1°C up to 15 days and evaluated periodically (on days 0, 3, 6, 9, 12 and 15) for microbiological (mesophilic and psychrotrophic bacterial counts), chemical (pH, TBA, TVN) and sensory (external aspect, muscular elasticity, odor and color) characteristics. Microbial analysis indicated that coating had significant effects (P < 0.05) in reducing the mesophilic and psychrophilic bacterial counts with at least a 15days extension of shelf life. Also, the samples coated with chitosan containing rosemary essential oil were showed lower TVN ,TBA and pH than other groups during the storage time and about of the sensorial factors. The samples coated with chitosan containing rosemary essential oil can keep on the sensorial attributes acceptably during 15 days storage time.
